- 250 gms mutton
- 1 bowl rice (soaked in water for about 2 hours)
- 1 tbsp ginger paste
- 1 tbsp fresh turmeric
- 1 tbsp garlic paste
- 1 tbsp cumin seeds
- 2 dry red chilies
- 1/2 tsp asafoetida
- 1 tbsp fennel seeds
- 2 tbsp cumin-coriander seeds powder
- 1/2 tsp turmeric powder
- 1 tbsp garam masala
- 2 tbsp red chilli powder
- 1 tbsp curd
- 2 tbsp khoya or mawa
- 2 tbsp rose water
- for Whole spices - 1 bay leaf, 1 black cardamom, 2 cloves, 4-5 black peppercorns, 1 cinnamon stick
- as required Oil
- To taste Salt
Steps to make to make Mutton roghan josh rice
- Mix 250 gms mutton, 1 tbsp ginger paste, 1 tbsp fresh turmeric, 1 tbsp garlic paste, salt as per taste in a bowl and allow it to marinate for about an hour.



- Heat 6 tbsp oil in a thick bottom vessel. Add 1 tbsp cumin seeds and let them splutter. Add 2 dry red chilies, 1/2 tsp asafoetida, all whole spices, 1 tbsp fennel seeds, 1 tbsp cumin-coriander seeds powder. Saute.


- Add the marinated mutton pieces and 1 small cup of water. Cover and let the mutton pieces cook.



- Once the mutton is somewhat tender, add one more cup of water. Mix, cover and let the mutton pieces cook fully.


- Once cooked, add 1/2 tsp turmeric powder, 1 tbsp garam masala, 2 tbsp red chilli powder, 2 tbsp khoya or mawa. Let the mawa melt. Add 1 tbsp curd and mix.



- Then add 1 bowl rice and water double the quantity of rice. Stir and add 1 tbsp cumin-coriander seeds powder & 2 tbsp homemade ghee and salt if required. Cover and allow the rice to cook.



- Once cooked, sprinkle 2 tbsp rose water for. Mix well and serve hot.

- Note - I have added some beet juice in some rice at the end to give it a slight colour
