- Turn on the flame, heat a pan, add ghee and let it melt.


- Add cumin seeds and fry it for few seconds.

- Add green chilli and curry leaves.


- Add peanuts and stir it.

- Fry it for a minute on medium flame.

- Add chopped potatoes, carrots and stir it.


- Cook it for 3 - 4 minutes on medium flame.

- In the meanwhile wash the samak rice.

- Add 2 tbsp of curd/yoghurt into the washed rice, mix it well and keep it aside.


- Once the potatoes are fried add roasted peanut powder and mix it well.


- Add rice and 2 cups of water.


- Add sendha namak (rock salt) and stir it well.


- Cover it and cook it for 7 minutes on medium flame and stir it once.


- Open the lid and stir it reduce the flame and cover the lid and Let it cook it for 4 minutes.


- Open the lid and stir it turn off the flame and cover it with lid leave it for 2 minutes, open the lid and stir it.



- Take out in a bowl and Press it flip the bowl in the serving plate.



- Garnish it with cashew (optional).

- And your samak rice upma is ready to serve.
