- For rice-
- 1.5 kg Soaked rice for 10 minutes
- 1 chopped onion
- 2 Tablespoons ghee(in addition to oil)
- 1 tablespoon Spice mix used in chicken (cloves etc)
- Few Cashews
- Few Raisins
- As per taste Salt
- Handful Coriander leaves
- 3 cups water
Steps to make to make Chicken biryani
- Marinate chicken with chicken masala, salt, ginger garlic paste and turmeric powder.



- Fry the onions and add cloves, cardamom etc. Add chicken afterward and seat on high flame. After both sides are seared, add 1 chopped tomato and stir for a minute. After 2 minutes, add 2 spoons yogurt, mint and coriander and chopped green chilli on medium flame.
- Add 0.5 cup water and cook for 8 minutes with lid covered. After it comes to a boil, cook on low flame.

- Microwave carrot for 4 minutes. Add rest of the ingredients of the raita.

- Soak the rice for 10 minutes at least. Add ghee and oil to pan. Brown onions and other spices in the pan. Pan should be big enough for rice and chicken to be combined later. After onions are fried, add cashews and raisins


- Add the drained rice and coriander. Add 3 cups of water. (Double amount of rice). Add salt and stir. Place on high flame and cover with lid until it starts boiling. Once on boil, simmer on low flame until rice soaked up the water.

- Coming back to chicken, uncover lid and simmer the water until a thick gravy is reached.

- Once rice has been drained (ensure that some water is still left for further simmering), add chicken to the pan on top of the rice. Do not mix yet. Simmer for 10 mins or until the water is completely gone. Let rest for 5 minutes and then mix the chicken and rice in the pan.
